Beans are the most protein-rich plant food. Its protein quality is similar to that in eggs and milk foods. Its protein content exceeds meat and eggs, which is about twice that of beef and twice and a half that of eggs. Therefore, scientists call soybeans a protein warehouse. The fat content in soybeans is 18%, most of which are unsaturated fatty acids. They are of good quality, low melting point and easy to digest and absorb. They are also rich in essential fatty acids and linoleic acid, which are indispensable for the human body to maintain health. Soybeans contain calcium, phosphorus, iron, copper, zinc, iodine, riboflavin, niacin, and vitamin E. Soybean sprouts are rich in vitamin C, so they are a good source of minerals, trace elements and vitamins.
